Can't argue with the price.

Overall this is a decent attempt, and for the price it's difficult to quibble, but there are still a few noticeable problems with this sandwich.

The red salmon is fairly good - it thankfully hasn't been reduced to paste so there are a few chunks of salmon which really add texture, and the flavour is also quite pleasing. It's rather too dependant on the mayonnaise rather than the salmon itself, but thankfully the mayonnaise isn't overpowering and the flavour of the salmon still comes through. If anything, the mayonnaise does seem to help dampen a certain dryness that the salmon possesses.

The cucumber is a little more disappointing. Although it's reasonably fresh and crunchy, the pieces are literally minute, which means it has very little impact in terms of both taste and texture. It also has little opportunity to combine flavours with the salmon too.

The oatmeal bread is fine but not particularly interesting and it really sums up what isn't quite right with this sandwich - there is nothing special about it. Co-op show it's possible to make a similar sandwich on a budget, and even though this is even cheaper it lacks anything to mark it apart. One obvious absentee is lemon juice in any form, which really would have picked up all the flavours and made this sandwich stand out a little better.

It's certainly not unpleasant, and to get a salmon sandwich for £1 represents good value, but there is something missing here, and while it tastes fine, there is the feeling that a small increase in price would make a huge difference in quality and flavour.
