Sausage, Chutney & Stuffing

Review posted: 23/09/2007One filling too many. Sometimes sandwiches are hampered by trying to offer too much, and this is one of those occasions. There's nothing bad here as such, and individually the fillings work really well together; but when combined, they often clash in a disappointing fashion.
The sausage used here is that thick and chunky stuff that appears in the excellent Finest 'All Day Breakfast'. Its flavour is strong - particularly with regard to the herbs - and the pieces are of an ideal size; they offer something to get your teeth into. The onion chutney is also surprisingly pleasant in flavour; it's not too strong, though it is a shade on the sweet side. The sausage and the chutney go nicely together.
However, the sausage also goes well with the sage and onion stuffing. While this stuffing isn't the best I've ever had, the way it fuses flavours with the sausage is actually quite impressive. The problem is that despite both it and the chutney being onion-based, they don't actually suit each other that well at all. I think it's more to do with texture than flavour, but the chutney makes the stuffing mushy, while the chutney gives the stuffing a slightly sweet tinge. You might not get all three fillings in each mouthful, and in that case the sandwich works; but when they are all combined it tastes a bit off.
To confuse matters further, this sandwich also has mayonnaise. This would have sat fine with the stuffing on its own, but it doesn't combine well with the chutney. And the malted brown bread is okay, though its slightly bitter taste jars on occasion with that of the chutney.
It seems whenever I find a sandwich with chutney in it, it also serves as the sandwich's biggest flaw. That's not because chutney doesn't belong in sandwiches, but rather that it is put with things it doesn't really go with. This sandwich really does have its moments, but it is also significantly undermined by bad design.
